Properties: Colourless or white crystal, relative density is 1.62, melting point is 73.3 to 76.7 centigrade. It is
soluble in water and insoluble in ethanol and carbon bisulfide, its aqueous solution shows alkaline and harms to skin. Heat it up to 100 centigrade, loses 11 crystal waters and becomes sodium phosphate monohydrate. Keep on heating up to 212 centigrade, it becomes sodium phosphate anhydrous . It is easy to airslake in the dry air.

Trisodium Phosphate is used to make a soft process cheese that melts and flows easily at 75 - 80°C.The high alkalinity is advantageous when quicker cooking rates are needed in cooked breakfast cereal.Increased pH also makes the product more creamy or yellow in colour, giving a richer appearance.
