ε-Polylysine is a high-efficiency antimicrobial agent or preservative. It is produced from a fermentation process using Streptomyces albulus under aerobic conditions. It has obvious inhibition to gram-positive bacteria and Gram-negative bacteria, yeast, mould, virus. In addition, it also has excellent safety, therefore it is widely used as an antistaling agent.
ε-Polylysine is pale yellow powder, strong hygroscopicity, slightly bitter; Easily soluble in water and hydrochloric acid, Not in organic solvents such as alcohol, ether. It's isoelectric point is 9.0, specific rotation [α] is +57.1°(c=1, H2O), [α] is +39.9°(c=1, 5, mol/L HCI)
1. Epsilon-Polylysine can greatly inhibit the growth of bacteria, yeasts and moulds bacteria, especially to the Gram- bacteria which can not easily inhibit by others.
2. As a good preservative, Epsilon-Polylysine is characterized as being high safety, water-soluble, stable at high temperatures, widely usage, non prejudice to the taste, antibacterial in neutral or subacidity conditions.
3. Because of the stability at high temperatures, it can inhibit some heat-resistant bacillus after heat treatment and some tadpole-form noncontractile siphovirus as well.
4. Epsilon-Polylysine can stop small intestine fat absorption through inhibiting pancreatic lipase activities, so it can be the diet therapy for obese patients.
5. Besides, Epsilon-Polylysine also can be used in cosmetics, disinfectant or cleaner for food machinery or hutch, etc.
